Health in a Handbasket: Healthy Valentine's Day treats

In this week’s Health in a Handbasket with the American Diabetes Association, registered dietitian Emily Kyle shared some last-minute healthy Valentine's Day treats.

Low Fat Crème Brulee

Prep Time: 5 minutes

This Recipe Serves 4


1 cup skim milk

¼ cup non-fat, plain Greek yogurt

1 egg

2 egg whites

1 teaspoon vanilla extract

¼ cup plus 2 teaspoons Splenda Sugar Blend, divided

4 5-ounce ramekins or crème brulee dishes

2 cups hot water

12 raspberries


1. Preheat oven to 350 degrees F.

2. In a medium bowl, whisk together skim milk, yogurt, egg, egg whites, vanilla and ¼ cup Splenda Sugar Blend. Pour mixture through a fine sieve into a small pitcher or liquid cup measure.

3. Line a small casserole pan with the ramekins or crème brulee dishes. Divide the custard mixture evenly between the four dishes. The mixture should come almost to the top of the ramekin.

4. Pour hot water into the casserole dish, ensuring you don’t splash any into the ramekins, so that the water comes half way up the ramekins.

5. Bake for 40 minutes on a lower rack in the oven. Remove ramekins from the pan and refrigerate for at least 1 hour (up to 24 hours).

6. Preheat the broiler or prepare a crème brulee torch. Sprinkle ½ teaspoon Splenda Sugar Blend on top of each crème brulee. Broil for 4-5 minutes or until Splenda Sugar Blend is slightly caramelized. Or brulee the Splenda Sugar Blend with a crème brulee torch until slightly caramelized. Let cool completely before serving.

7. Serve each crème brulee with three fresh raspberries on top.

Chef Tip: Keep an eye on the crème brulees while torching or broiling. The Splenda Sugar Blend on top will go from caramelized to burnt very quickly so the times may vary.

Greek Yogurt Chocolate Mousse

Prep Time: 10 minutes

This Recipe Serves 6


6 mini Hershey's Sugar-Free Special Dark Chocolate bars, chopped

2 cups nonfat plain Greek yogurt

2 tablespoons stevia

1 teaspoon vanilla extract

¼ cup skim milk

¾ cup nonfat whipped topping


1.Add the chopped chocolate to a microwave-safe bowl. Microwave the chocolate on high for 1 minute, then stir. If not completely melted, microwave for 30 more seconds, then stir until all chunks are melted. If it is still not melted, microwave another 30 seconds and continue to stir, just until the chunks in the chocolate are melted. Do not overcook.

2. In a medium mixing bowl, whip the Greek yogurt with an electric mixer until fluffy. Add the stevia, vanilla, and milk, and beat some more, then add the chocolate, a small amount at a time, beating in between additions.

3. Once all of the chocolate is mixed into the yogurt, divide the mousse into 6 portions and top each portion with 2 tablespoons whipped topping.
