Weight Watchers: Hit refresh on happy hour

How exactly are donuts part of a Weight Watchers diet and happy hour? Katie Bauer explains.

As the summer months approach, Katie Bauer from Weight Watchers has some ideas on how you can redefine happy hour, beyond just enjoying some food and drinks.

Recipes include: Tex-Mex shrimp rolls, chickpea and lemon bruschetta, strawberry lemon baked donuts and more.

Tex-Mex Shrimp Rolls

Prep/cook: Under 20 min.; Serves 4

Line each roll with Bibb or leaf lettuce and thinly sliced plum tomatoes before adding the shrimp salad.

1/2 pound cooked medium peeled and deveined shrimp, halved or chopped

3 scallions, thinly sliced

1/4 cup fat-free salsa

1/4 cup reduced-fat mayonnaise

3 tablespoons fresh cilantro leaves

1/4 teaspoon salt

4 light (reduced-calorie) whole wheat hot dog rolls, toasted

1.Toss shrimp, scallions, salsa, mayonnaise, cilantro, and salt in medium bowl. Fill rolls evenly with shrimp mixture. That’s it!

Chickpea and Lemon Bruschetta

Prep/cook time: Under 20 min.; Serves 6

1 (15.5 ounce) can chickpeas, rinsed and drained

1/4 cup finely diced red onion

1 teaspoon grated lemon zest

1 tablespoon lemon juice

2 teaspoons extra-virgin olive oil

1 garlic clove, minced

Pinch cayenne

1 small ( 1/2 pound) whole wheat baguette

1/4 teaspoon paprika

1.With fork, coarsely mash chickpeas in medium bowl. Add onion, lemon zest and juice, oil, garlic, and cayenne; stir until combined.

2.Heat grill pan over medium-high heat. Cut off ends of baguette; discard of save for another use. Slice baguette on diagonal into 12 slices. Place slices of bread on pan and grill until well marked, about 2 minutes per side. Spread chickpea mixture evenly over bread and sprinkle with paprika.

Strawberry-Lemon Baked Doughnuts

Prep 24 min.; cook 16 min.; cool 10 min.; Serves 6

Be sure to use fresh strawberries if possible, as frozen berries will give off a lot of water and could result in mushy doughnuts.

Nonstick spray

1 large egg

2 Tbsp granulated sugar

1/4 cup low-fat (1%) milk

2 Tbsp fresh lemon juice

1 tsp vanilla extract

3/4 cup all-purpose flour

2 tsp finely grated lemon zest

1 tsp baking powder

1/2 tsp salt

? cup fresh strawberries, cut into very small pieces

? cup freeze-fried strawberries, roughly crumbled

1 Tbsp confectioners’ sugar

1.Preheat oven to 350 degrees F. Coat a regular-size 6-hole doughnut pan with nonstick spray.

2.In a large mixing bowl, whisk together egg and granulated sugar. Add milk, lemon juice, and vanilla; whisk well.

3.Add flour, lemon zest, baking powder, and salt to bowl; stir well. Add fresh strawberries to batter; gently fold to incorporate.

4.Evenly divide batter in pan by pouring ? cup batter into each hole. Or you can place batter in a zip-close plastic bag, cut off a corner, and pipe into pan.

5.Bake for 16 minutes; remove from oven and let cool in pan, about 10 minutes. Using a knife, gently nudge doughnuts around edges to remove them from pan.

6.When cool, sprinkle with crumble freeze-dried berries; dust with confectioners’ sugar.
